Camp Breakfast for a Crowd Without a 36-Inch Griddle
I feed a crowd on a 17-inch in batches. The 36-inch stays home unless the truck is empty.
Field notes — I write these in first person, from how I actually pack. Photos go in when I have them.
Batches beat square footage
I cook bacon first, hold it, then eggs, then pancakes. A foil pan on the side of the table is the ‘second griddle.’ People can eat in waves. That is fine.
I pre-mix dry pancake mix at home. I do not measure flour in the wind.
I still refuse the patio station for a normal trip
The 36-inch four-burner is excellent. It is also huge. If I need tents, kids, and a cooler, the station loses. If the van is a rolling kitchen, I will take it and I will say so. That is a different category.
