Field notes — I write these in first person, from how I actually pack. Photos go in when I have them.

Photo slot — Thin oil sheen on a hot 17-inch tabletop, not a perfectly black studio griddle. I will drop a picture in when I have one that is not a stock shot.

Home is easier. Camp works.

I do the first season in the driveway: wash, dry, thin layer of high-smoke oil, heat until it stops smoking, wipe, repeat a few times. Then I do not have to burn through a propane bottle at a picnic table while everyone is hungry.

If I have to season at camp, I do it before I cook food, not as step one of dinner.

Thin oil. I mean thin.

I wipe it on and wipe it almost all off. Puddles become sticky. I use a paper towel I am willing to throw away. Two spatulas live in the kit so I can scrape without hunting.

After cooking I scrape, splash a little water to steam the gunk, scrape again, thin oil, done. I do not soap a seasoned top unless I have to.

I do not baby it like an heirloom

It will get marks. It will ride in a trunk. That is why I buy a camping-sized 17 or 22, not a patio island I am afraid to scratch.
